This meatloaf is SO moist and flavorful! Also, It is SO simple to make and it even looks pretty!
We roasted some root veggies, EVOO, SnP as a side dish -- a completely delicious and satisfying meal!
Ingredients:
- 2 Large eggs
- ¾ cup milk (I used whole milk.)
- ⅔ cup seasoned bread crumbs
- 2 heaping teaspoons dried minced onion
- 1 teaspoon salt
- ½ heaping teaspoon rubbed sage
- ¾ cup sliced fresh mushrooms (I used portobello.)
- 1 ½ pounds ground beef
- 1/3 cup ketchup
- 2 teaspoons brown sugar
- 1 teaspoon ground mustard
- 1 teaspoon Worcestershire sauce
Do this:
Line slow cooker with parchment paper.
Add eggs, milk, bread crumbs, onion, salt, sage, and mushrooms in a large bowl – mix well. Crumble ground beef over mixture and mix (don’t over mix).
Add mixture to your slow cooker and lightly spread/press to cover the bottom of the crock. Cover and cook on HIGH 3-4 hours -- until a meat thermometer reads 160 degrees.
Whisk ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl and spoon sauce over the meat loaf. Cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting.
(If you like a lot of sauce, double the sauce recipe. If you like a sweet sauce, add more sugar.)
Enjoy in good health and good company.
