Hearty Quinoa Chili, Slow Cooker, Crock Pot Recipe
So good and hearty! This is a simple recipe and comes with a little KICK! Next time we make it, we will likely add more beans—just a personal preference. Try it today for an easy, healthy, meal solution!

Ingredients
-1 pound ground beef
-1 medium onion, chopped
-2-3 garlic cloves, minced
-1 can (28 ounces) diced tomatoes, with mild green chiles
-1 can (14 ounces) fire-roasted diced tomatoes
-1 can (15 ounces) garbanzo beans, drained
-1 can (15 ounces) black beans, drained
-2 cups beef broth
-1 cup quinoa (we used Red Quinoa)
-1 tablespoon dry onion soup mix
-1-2 teaspoons crushed red pepper flakes
-1 teaspoon garlic powder
-1/2 teaspoon cayenne pepper
-1/2 teaspoon salt
Do this:
-Brown beef along with the onion and garlic.
-Add the beef mixture and all remaining ingredients to the slow cooker.
Cook on high – 3-4 hours
Topping options: sour cream, cilantro, avocado, chopped red onions, cheddar cheese
