Comfort food without the guilt! Will this replace Mac and Cheese? Probably not, but it's a delicious alternative! We always try to create simple but delicious and healthy recipes. This one checks all those boxes. This dish is great on its own as a meal or as a satisfying side dish for your hearty eaters!
If you are not concerned about calories and want it super cheesy, add another cup of cheddar cheese!
We also tried frozen cauliflower instead of fresh. We prefer the recipe using fresh cauliflower; however, the frozen version works too. (We used 30 ounces.)
Ingredients
- 1 head cauliflower, cut into florets (buy organic whenever you can)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/3 cup finely diced onion
- 4 oz. cream cheese, cut into strips or cubes
- 1 cup shredded cheddar cheese
- 2-3 green onions sliced
Simple steps:
-Grease the inside of your slow cooker/crock pot.
-Add all the ingredients. Mix.
-Stir occasionally during cooking time.
Cook on LOW for 3 - 3 1/2 hours, depending on how tender you want the cauliflower and depending on the size of your slow cooker/crook pot.
Top with onions and enjoy in good health and with good company.
