Soup is a great way to add vegetables to your diet. Make at least one pot of soup every week!
Add color to each meal. Go green! and red, orange and beyond! It does the body good.
Ingredients

3 cups water

1 (14.5 ounce) can diced tomatoes, undrained

2 medium potatoes, unpeeled and cubed

2 cloves garlic, pressed

2 medium onions, diced

3 stalks celery, sliced
-
2 medium carrots, unpeeled and sliced

3 beef bouillon cubes
-
1/2 teaspoon each of: dried basil, dried oregano, salt

1/4 teaspoon pepper
Directions
In a slow cooker/crock pot, combine all the ingredients.
Cover and cook on high for 6-8 hours.
Season to taste.

- This makes a great main dish; however, you may serve it as a side dish too.
