Ingredients

3-4 bell peppers – various colors –cut as desired

2 cups fresh mushrooms sliced

Kosher salt (or any salt you have on hand)

Pepper

Olive oil (enough to lightly coat the veggies)
Directions
Grease the crock pot/slow cooker and then add all the veggies
Lightly coat the veggies with olive oil; sprinkle Kosher salt and pepper on veggies and mix
Cook on low 3-5 hours. Stir occasionally.
