This is a simple and tasty way to work more veggie into your diet! Onion, celery, carrots, peppers, zucchini, cauliflower, spinach, green beans, tomatoes—veggies galore! Try it today!
- 1 large onion, chopped
- 3 stalks celery, chopped
- 2 carrots, chopped
- 1 green pepper
- 1 red pepper
- 2 zucchini, chopped
- 4 cloves garlic, minced
- 2 cups chopped cauliflower florets
- 1 ½ cups fresh green beans, chopped
- 28 ounces canned diced tomatoes
- 1 Box cup beef broth (32 ounces)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- Ground Buffalo, 12 ounces
- 2 cups fresh spinach (add in last 5 minutes of cooking)
- Avocado (for topping)
-Brown the meat with the onion and garlic. Add the meat mixtures and all remaining ingredients (except the fresh spinach and avocado) to the slow cooker/crock pot.
-Cook on high 3-4 hours
-Add spinach in the last 5 minutes. Top with avocado.
