Entertaining this weekend? Artichokes are an interesting and fun side dish to make for your guests. The presentation is beautiful and original. Your guests will be impressed and appreciate the special treatment. You will appreciate the simplicity.
Ingredients

4 medium-sized Artichokes

1 teaspoon of Kosher Salt (or any salt you have on hand) (1/4 teaspoon per artichoke)

3-4 Lemons to make 8 tablespoons fresh lemon juice (2 T to each artichoke)

2 cups of Hot Water

Melted Butter or Olive Oil

Dipping: Use Melted Butter or Olive oil with lemon juice for dipping
Directions
Wash and trim the artichokes -- cut off approximately one inch off the top and snip the ends of the pointy leaves; cut off the stem to form a flat bottom.
Stand artichokes upright in slow cooker.
Sprinkle each artichoke with 1/4 tsp of salt and 2 tbsp of lemon juice.
Pour two (2) cups of hot water around the bottom of the chokes.
Cover and cook on Low 7-8 hours; or High for 3-4 hours
Recipe Note
-Want variety? During cooking, you may add thyme, rosemary and pressed garlic to each artichoke (add to each artichoke after they have cooked a while and opened up some). Dipping -- add pressed garlic to the melted butter and lemon juice—oh yah!
-So pretty and even healthy! The artichoke is high in antioxidants and fiber; aids in digestion and may help fight certain cancers.
