Slow Cooker/Crock Pot — Colorful Peppers and Mushrooms
So simple, yet delicious, colorful and healthy. Good eating doesn’t have to be complicated!
- 3-4 bell peppers – various colors –cut as desired
- 2 cups fresh mushrooms sliced
- Kosher salt (or any salt you have on hand)
- Olive oil (enough to lightly coat the veggies)
What to do:
-Grease the crock pot/slow cooker and then add all the veggies
-Lightly coat the veggies with olive oil; sprinkle Kosher salt and pepper on veggies and mix
-Cook on low 3-5 hours. Stir occasionally.
