Slim Summer Soup for Slow Cooker/Crock Pot

Slim Summer Soup!  This is a simple way to work more veggies into your diet.  Also, it helps you feel full on fewer calories.  If you don’t like vegetables – try to acquire a taste for them!  The nutrients in veggies are vital for health and maintenance of your body – your temple!

Place ingredients below in a Slow Cooker/Crock Pot:

- V8 Low Sodium – 46 ounces

- Beef Broth Low Sodium – 32 ounces

- 2 Medium Onions – chopped

- 5-6 Carrots – sliced

- 5-6 Celery stalks – chopped

- 2 Cloves Garlic–minced

- 2 Bell Peppers – chopped

- ½ – ¾  head of cabbage – coarsely chopped

-1 Packet of Dry Onion Soup

-Optional:  Canned Diced Tomatoes – Peeled; 28 ounces (drained)

Cook approx.:   3-4 hours High; 4-8 hours Low

- Lime Wedge –  serve the soup and squeeze a lime wedge over it . #Miami #Cuban

Need more spice?  Try adding: Chili Powder and/or Italian Seasoning

Healthy Additions/Toppings:

-Ground Flax Seeds

-Sliced Avocados



-Protein Powder (flavorless)
